Frank Castro, the Director of Child Nutrition Services for the school district said that "Meatless Mondays" has evolved slightly from last school year.

Castro told Patch, via email:

"We are beginning the year with Meatless Mondays in our high school cafes only. We had a very low response in grades K-8. Parents wanted more protein. Since we don't serve any nuts or tree nuts we were a bit limited in that regard."

Castro says that the district is checking into adding tofu but won't be able to incorporate those products into the menu until November.

"At that point we will consider meatless Mondays again in K-5," Castro said. "What we are doing that is new is we are including a salad bar meal everyday in K-5. We will use chicken, eggs, soy beans and string cheese as our protein items. This will allow us to expand to a soup and salad combo in the winter and soup/sandwich/salad combos in the spring. We will have the same menu expansion for grades 6-12 as well but we already have salad meals at those grade levels."

The school district also encourages students to bring refillable water bottles to school.
